Scotland probably has the greatest range of seafood anywhere in the world, however to overcome seasonality and weather problems, we also source from other parts of the United Kingdom. Small inshore boats with lines and gill nets are used, when possible, to supply a very high quality of fish with no damage from trawl nets or from long periods on ice. These are family owned boats landing their catch on a daily basis. Packing at the port of landing ensures the high quality is maintained to the final destination.
